James' 1st Birthday Party (I know, finally!)

Here are a few photos from James' big day (you can click on them to make them bigger)-- he had a blast although he seemed overwhelmed with the experience at times (namely cake time). And as soon as his pj's were put on him he got his second wind and was a very slappy happy kid again. I think the biggest hit was his new Radio Flyer rocking horse which all the kids loved (did I mention we got it on clearance for 20 bucks!).

I was up til midnight the night before baking his cake so it came out kinda lumpy but hey, at least he had an allergen free cake to not eat (at least mama got to eat something). I used a box of the Gluten-Free Pantry vanilla cake mix and substituted Ener-G Egg Replacer for the egg (although next time I think I'll use 1/4 c. soy yogurt instead since it turned out pretty dry). I also got lured into buying a packet of Pamela's gluten-free icing mix but later I realized you can make any icing gluten-free because it's just sugar & shortening. So mama's still learning but at least we're getting there :-)
