buckwheat pancakes (take 2)

just added a new twist to my allergen-free buckwheat pancakes-- and James eats these!! the lil' guy doesn't like anything bread-like but i finally got him to eat some pancakes yesterday-- woohoo!

Buckwheat pancakes
(wheat-free/gluten-free, egg-free, dairy-free)
1 c. buckwheat flour
1 tsp. baking powder
2 T. sugar
1/2 tsp. salt
2.5 T. flaxseed meal whisked together with 3 T. water
(or, substitute 1 egg beaten)
1 c. milk (rice, soy, almond, cow's, etc.)
2 T. melted butter or dairy free margarine

Mix dry ingredients together. Add flaxseed meal mixture, milk, and butter, beating well after each addition. If mixture is too thick, add a small amount of milk until reaches desired consistency. Pour 1/4 c. batter for each pancake onto a hot griddle. Flip pancakes when they begin to bubble. Cook until golden brown. Enjoy with favorite toppings!
