Okay, in case there's another poor soul in this world who has to live extremely allergen free, I thought I'd post this recipe. It's the same as the one that comes on the Hodgson Mill's buckwheat flour box but with a few tweaks.
1 c. buckwheat flour
1 tsp. baking powder
2 T. sugar
1/2 tsp. salt
1 egg beaten (I sub 1 mashed banana)
1 c. milk (I sub rice milk)
2 T. melted butter or margarine
Mix dry ingredients together; add egg, milk, and margarine, beating well after each addition (will be pretty runny). Pour 1/4 c. batter for each pancake onto hot griddle. (This is when I usually press a few thin slices of banana into the pancake). Flip when edges look cooked and bubbles begin to break on surface.
Once cooked, I usually serve Corey's pancake with a little butter and wheat germ sprinkled on top (just because I already have some in the cupboard). The pancakes are pretty dense (because I have to sub banana for the egg) but they have really good flavor!

Hi Ellen,
I was talking to a fellow preschool mom, who is also a nurse, and she mentioned a friend of hers whose son has severe allergies. He's 5 now. Anyway it end up he has a condition called Double E (like you and me! EE - get it!), it has something to do with his esophogus tightening. He would never eat (sound like someone we know?) he would nurse, but it was difficult to get him to eat solid food as a baby. Just thought I'd mention it as something to ask about. I hadn't heard about it before.
